I have started baking a lot more and just made these yummy strawberry cookies with strawberry buttercream icing. They are super simple to make and they are the perfect color for Valentine’s Day. For the cookies you only need three ingredients which is why I picked these to try out.
All you you need is strawberry cake mix, I used Duncan Hines, eggs and vegetable oil. And the icing is real simple too just need confectioners sugar, a stick of butter and the only strawberry flavor that I had in my house was Strawberry Quick milk and some red food coloring.
1 Box of strawberry cake mix
1/3 cup of oil
Preheat oven to 375. Mix cake mix, eggs, and oil in bowl on low with a mixer until blended together. It will be thicker than the way when you make a cake. On a non stick cookie sheet just drop by spoonfuls about two inches apart and bake for about 10-12 minutes. Take out and let them cool completely be fore icing them.
Strawberry Butter Cream Icing~
1 stick of butter softened
4 & 1/2 cups of confectioners sugar
6-8 tablespoons of strawberry milk
Beat the butter with a mixer until creamy. Slowly add in the confectioners sugar a little at a time and continue to mix. Once you have about 1/2 of the powdered sugar added you can add about two tablespoons of the milk and keep mixing and adding the powdered sugar and the strawberry milk one tablespoon at a time until you get the consistency that you want. After you have it mixed add 1-2 drops of food coloring depending on how dark you want the icing to be. I used two drops. Blend the food coloring in with your mixer and you are ready to ice the cookies. I added a few red sprinkles too just for some more color.
Simple and and easy recipe and the taste like a strawberry milkshake!
